Cake Decorating – The Next Layer will cover:
- Creating buttercream and ganache
- Torting a cake, and setting up cake boards in preparation for decorating
- Exploring techniques such as flower wiring, edible images, border piping, gold leaf design, piping succulent flowers, dried flowers and different piping techniques
- Understanding how to setup, structure and design a 2-tier cake using buttercream
- Understanding how to cover an extended tier cake using fondant and texture design
- Understanding how to develop a realistic business plan
The class is 3 hours a week for 10 weeks. (Please note: Term 1 2024 will go for 8 weeks)
Classes are normally scheduled according to school terms and thus there are generally four intakes per year. If you don't see any classes listed below please click on the enquire button and we will contact you to discuss your enrolment options.
All classes are delivered at venues throughout Wyndham. Note: if a class is listed as online you will need to ensure you have access to a reliable desktop computer/laptop and wifi/internet. The fees listed below constitute a services and amenities fee which is non-refundable. When enrolling through the online system payment must be made with a credit/debit card.
Note: Not suitable for people with allergies. There is an additional $40 resource fee in addition to the amount listed below. Learners will be taught how to prepare buttercream and ganache in week 1. They will then be instructed when required to bring a crumb coated cake and icing to class. Other decorations and resources will be provided.
We recommend the use of a computer/laptop/tablet and not a smart phone when enrolling.

REMINDER: you cannot enrol online if you are not a citizen/resident OR if a third party is paying for your fees. Those who cannot enrol online must enrol in person at 20 Synnot St.
